Very Colourful Blueberry Muffins, for Breakfast


Some mornings I wake up and feel I would like to be just a little bit naughty, let my hair down, break the rules, you know... That sort of thing. In my world, it doesn't get much worse than eating sweets for breakfast. Eating foods I know I shouldn't, because they're in no way good for me, or – even worse – baking foods that aren't suitable for breakfast (though others do help out in the eating department).

To tell the truth, it was rather an impulsive decision on my part. My brother has been nagging me to bake muffins for ages, and I just happened to have a bowl of de-frosted blueberries in the kitchen. They just threw themselves into my arms (literally...), and there was nothing for me to do but make these muffins. Fortunately, this is a pretty easy recipe, except that it isn't. I believe I added just a few too many blueberries, and I was just, perhaps, a little too eager when I added them to the dough. So the dough turned purple.


I actually made them last night, but re-warmed them this morning. I thought I was going to pass out with happiness as I enjoyed a muffin for breakfast for the first time since, well forever. Actually I don't think I've ever had muffins for breakfast before. This probably has a lot to do with the fact that I'm no fan of muffins. These are actually quite good, though (not too dry, not too crumbly, just too purple?) The texture is actually quite perfect, if I may say so myself, and the taste superb. However, those that had a few too many blueberries were pretty moist in the centre. Not that I'm particularly bothered with a blueberry-laden muffin. It's healthier, non? It gives you a perfectly valid excuse to have two blueberry muffins for breakfast. Hello? That's awesome.


You may have guessed it already, but I am a friend of the humble blueberry. Except that I usually don't like to eat my friends. If you're a foe, though, you can replace the blueberries with black currants, raspberries or red currants. They'll be just as good, promise! And it makes for a nice change. They're also not too sweet, which is why I had two for breakfast. You'll actually get to taste the blueberries, just how I like it. They're quite charming to watch in the oven, growing up and all. A few cracked on top, but I didn't mind, because I got a nice glimpse of a purple centre. My mouth watered and my stomach roared at the sight. Truly. A nice, lovely purple colour, all natural, of course. So there you have it. Muffins for breakfast. 

Naughty? Oh yes. But nice. Most certainly.


Blueberry Muffins 
Recipe by London Eats

*Ingredients*
350 g. flour
2 tsp. baking powder
A pinch of salt
1 tsp. vanilla extract
115 g. butter, melted
2 eggs
115 g. soft brown sugar
300 ml. milk
180 g. blueberries

1.Preaheat the oven to 200°C.

2.In a bowl, mix the flour, baking powder, salt and brown sugar. In another bowl mix the vanilla essence, butter, eggs and milk and beat until smooth.

3.Pour the liquid micture over the dry ingredients and combine well. Fold in the blueberries and divide the batter between the 16 muffin paper cases. Bake for 25 minutes or until a skewer inserted in the centre of a muffin comes out clean.


Blåbærmuffins
Oppskrift frå London Eats

*Ingrediensar*
350 g. mjøl
2 ts. bakepulver
Litt salt
1 ts. vaniljeekstrakt
115 g. smør, smelta
2 egg
115 g. mjukt brunt sukker
300 ml. mjølk
180 g. blåbær

1.Varm opp omnen til 200°C.

2.Bland saman mjøl, bakepulver, salt og brunt sukker i ein bolle. Bland saman vaniljeekstrakt, smør, egg og mjølk i ein annan bolle og bland godt saman.

3.Bland saman dei tørre ingrediensane med dei våte. Ha i blåbæra. Ha røra i muffinsformer og steik i 25 minutt.

Søt! Sounds like a lovely day! Freshly baked blueberry muffins(add butter on top) and coffee = perfect morning!

blueberry muffins are a classic. i'm not ashamed to say that muffins may be one of my favorite breakfasts. i just tell myself they're healthy because they have fruit, and i don't eat them with glaze most of the time. this recipe was great, thank you!
