|Grapefruit Salad |
1 medium-sized or large grapefruit
200 g. (7 oz.) rocket salad
Seeds from 1 pomegranate
2 tbsp. honey
1 tbsp. chopped fresh herbs, of your choice
Juice of 1 clementine
1.In a small jug, mix the clementine juice, honey and fresh herbs together. Set aside.
2.Peel a grapefruit, and cut in slices. Rip or cut the slices into smaller pieces. Cleanse the salad and pomegranate seeds, and mix with the grapefruit pieces. Pour the honey-clementine sauce on top, mix and serve.

Grapefruit salad. HURRAH! I love grapefruit.
Not only my favourite fruit, you see, but probably on my Top Ten list of all things I love to eat (and, if pressed, to drink.) See, usually I'm not really a fruit person. I love berries – their tricky balance of acid and sweet is dreamy – but most tropical fruits are just too sweet. But grapefruit is bitter, my friend, and bitter is good. All good things in life are bitter – coffee, dark chocolate, rocket salad... I'm just saying, that's all. But the combination of rocket salad and grapefruit is very, very bitter, so to make the salad edible, I added a honey, herb and clementine juice sauce. 'Twas very, very good.
I created this little salad for mum's birthday party in late May. My salads are generally quite boring. I can be very lazy and frequently just toss five or six different types of vegetables together; serving the thing with a dash of oil, salt and pepper. But special dinners call for special salads, so voici ma petite salade.
